Torment us with the last thing you ate (with or without photos) and/or a recipe you'd like to share with the class!

Yesterday I made a discount Thanksgiving dinner (chicken and gravy with a variety of potato-type things, and green beans), possibly the first time I've done a Holiday Cooking all by my adult self and only for two people. Today we got Applebees delivery, which is really just an excuse for me to eat too many pretzel breadsticks instead of cooking. I am also drimk (chocolate flavored red wine because I have the sophisticated tastes of a five-year-old).

For the past 3 years I have taken up the Thanksgiving torch after my grandma passed and her sisters decided to disband the big Thanksgiving. In prior years, hosted a smaller one with my parents/siblings, my elderly aunt and uncle and my single cousin who wouldn't get one otherwise. I love love love to cook for big groups so it broke my heart to learn that we would not be able to do that this year.

I ended up cooking everything anyway and just having my my mom and little sister over on the patio. I sent her off with leftover boxes for my older sister and her family and I prepared boxes to deliver to my aunt/uncle and cousin so they'd get some Thanksgiving.

I made green bean casserole, cranberry sauce, mashed potatoes, stuffing and turkey. I brined the turkey for 2 days in pickle juice and it turned out perfectly moist. Not to toot my own horn but I love to cook and I'm really proud of it!

We got some cranberries as part of a produce delivery so I looked up a recipe for cranberry chutney and tried making a thing.

I used honey instead of sugar and added cayenne pepper and some other spices not listed in the recipe because I am deranged, but it came out OK, I think.

I eated most of them but I got Jerami to try one and he was thoroughly weirded out. "This is a nut? Why is it soft???" Oh, sweetie.

(Yes I'm 35 years old with a mortgage, yes I still eat most of my food at my desk and use my drawing tablet as a tray because I'm an absolute gremlin, we exist.)

I've fallen off cooking these last few days but yesterday I made crock pot chili! I apparently can't eat chili without cornbread these days, though, so it was a bit of a bust.

I tried making tamales last week! They were both less complicated and more time-consuming than I had anticipated, but the results were not abysmal for a first attempt, I think. c: Photo under the spoilertag!

I've gotten pretty good at cooking salmon and sautéing vegetables to go with it! We had some awesome salmon this past monday. No pics, tho.

Jerami got us a book of home canning recipes, so I started with fridge pickles since I figured they'd be harder to mess up catastrophically than the ones that require heat processing and actual canning equipment. I also tried making pickling spices from scratch, since I had most of the ingredients lying around already.

They gotta chill for a couple of weeks, tho.
 
Recently I threw together a quick baked penne recipe:

Finely chopped shallot and finely chopped garlic sautéed in extra virgin olive oil (until light brown), a small can of tomato sauce, fresh chopped oregano and parsley, ricotta (probably about half a cup), about a third of cup of heavy cream. Add penne pasta (cooked however long you like :D), bake 25 minutes at 350°F, add lots of shredded mozzarella, bake 5 more minutes.

It's been pretty handy when we need something quick and filling. 😁

I love everything going on in this, especially the shallots; have you ever broiled it a bit at the tail end, or do you think that'd overdo it?
