I attempted butter chicken last night. (The rice is basically this recipe with brown rice.)

Thank you! I've only made it a few times, but it's becoming a go-to meal when I'm feeling too tired for something more elaborate.

Also, the words butter and chicken are doing wonderful things in my imagination. I hope it was delicious. ❤
I love everything going on in this, especially the shallots; have you ever broiled it a bit at the tail end, or do you think that'd overdo it?

XD It's funny: the first time I made this dish I tried broiling it. But the only other thing I broil is the swiss cheese in onion soup, which takes about 5 minutes 45 seconds to brown nicely. I knocked a minute off for the mozzarella, but I ended up with this blackened leathery top. 😂 So I've just been baking the cheese.

But maybe if I tried broiling it for around a minute instead . . . 🤔
 
I have made beer risotto (with an unreasonable excess of cheese, and also bacon):

That looks really good (I'm notoriously a fan of spicy things, so I'd probably have to try it).

I tried making persimmon bread recently. I hadn't really made anything with persimmons before (other than putting them in salad) but it turned out kind of like banana bread and mostly stuck together like it was supposed to (I'm very bad at baking so this is not usually the case).
